Ingredients:

  • 1 lb dried navy beans
  • 1/2 cup maple syrup
  • 1/2 cup molasses
  • 1/4 cup brown sugar
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/2 lb bacon, diced (optional)
  • 2 tbsp mustard
  • 2 tbsp apple cider vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups water

Instructions:

  1. Soak Beans:

    • Rinse and soak the dried navy beans in water overnight.
  2. Preheat Oven:

    • Preheat your oven to 325°F (165°C).
  3. Prepare Ingredients:

    • In a large ovenproof pot or Dutch oven, combine the soaked beans, maple syrup, molasses, brown sugar, onion, garlic, and diced bacon (if using).
  4. Mix and Add Water:

    • Stir in the mustard, apple cider vinegar, salt, and black pepper. Add enough water to cover the beans.
  5. Cook:

    • Bring the mixture to a simmer on the stovetop. Cover the pot and transfer it to the preheated oven. Bake for 4-5 hours, stirring occasionally, until the beans are tender and the sauce is thick.
